Cheese Burger Soup

Dairy Free Cheese Burger Soup

Ingredients

2 lbs Ground Beef
1 Onion Chopped
1 C Carrot Shredded
1 C Celery Chopped
4 C Beef Broth
4 Potatoes cubed
2 Jars Honest Stand Cheesy Sauce - Smoked flavor
2 Tbsp dried Garlic or 1 fresh Garlic
2 Tbsp Basil
1 Tbsp Parsley
1/2 tsp Dried dill
2 Tbsp Olive Oil

Optional

Chopped Bacon
Daiya Shreds in Cheddar
Chopped Chives


Directions

1.  In a large pot, heat Olive oil over medium heat: cook and stir the onions, carrots, and celery until the onions start to caramelize, then remove place them in a glass or ceramic dish and keep them warm.

2. In the same pot, brown the ground beef, stirring in 1-2 cups of the beef broth while browning.

3. Stir back in the vegetables, and add the garlic, parsley, dill, as well as the remaining beef broth. (If you would like a thinner soup you can add it 1-2 more cups of beef broth.)

4. Increase temperature and bring the pot to a light rolling boil, then add in the potatoes. Once the potatoes are boiling in the soup reduce the pot to a simmer and cover, stirring occasionally. Cook for approximately 30 minutes until the potatoes are fork tender.

5. Reduce the temperature to low and add in the cheese sauce, stir well until completely incorporated.

6. Serve plain or topped with any or all of the optional ingredients, and enjoy.

Alternate sauce if you are good with cheese

2 C Shredded Smoked Gouda
1 1/2 C Milk
2 Tbsp Butter
1/4 C sour cream or yogurt

Make sauce in separate pan. Melt the butter over a low to medium heat, add in milk then gradually add in cheese then the sour cream or yogurt. Do not overheat, or boil, you want it melted not scorched.
